- Mientras tanto en una cacerola pones los champiñones con la cebolla y 1 ajo bien picado ya que tengas el guiso, corta los pimientos en julianas. y empieza a poner en un refractario una capa de berenjenas, después pones el queso junto con la espinaca y pones los pimientos, después pones otra capa de berenjenas pones los champiñones lo que te quedo de julianas y lo que te quedo de queso con espinaca todo bien esparcido, por ultimo viertes la salsa de pimiento y el queso panela, ya por ultimo la vuelves a meter al horno a unos 200 grados y esperas a que el queso se dore un poco y listo ya tienes tu lasagna de verduras.
- Para la salsa:
Asar los pimientos rojos y quitarles la piel, pones el queso crema en la licuadora junto con los pimientos y el ajo. pones un poquito de leche para que se pueda moler. y listo!! - Recuerda que debe de quedar espesa la salsa!! y la vas a verter entre capa y capa de berenjenas.
